Stewed pork with cauliflower

Cauliflower and meat match together wonderfully to produce a very nutritious and delicious dish.

Ingredients:

  • cauliflower TM «Artika» 600 g;
  • pork 400 g;
  • onion 140g;
  • garlic 2 cloves;
  • bunch of parsley;
  • lemon 1/2 pc;
  • laurel leaf (= bay leaf);
  • allspice (Jamaica pepper);
  • black pepper, pre-ground;
  • vegetable oil;
  • salt to taste.

 

Method of cooking:

  1. Into the boiling water put salt, allspice and bay leaf; and then let it boil for a couple of minutes, in order to eliminate the original specific scent of cauliflower. Then add cauliflower to this broth and cook for 5 more minutes.
  2. Take cauliflower out and wait until the liquid drains down.
  3. Wash meat and let it dry for a little bit, then cut it into small pieces.
  4. Roast the meat on the pre-heated pan until golden brown, and then add the onion and fry for another ~5 minutes. After the roasting, add chopped garlic, spices, salt, and lemon juice. Then stew under the lid on a low heat for another 10-15 minutes.
  5. Add cauliflower to the meat, mix gently, so as not to damage the cauliflower heads; and stew on low heat for another 5 minutes. When finished, dredge the dish with chopped parsley.
