Cauliflower contains mineral salts, proteins, carbohydrates. Cauliflower protein is rich in valuable amino acids (arginine, lysine). This variety of cabbage contains relatively low level of cellulose (= insolublefibers); and due to its gentle structure, it is quite easily digested by the body. Most of the nitrogenous substances of cauliflower are easily digestible protein compounds, so that cauliflower is absorbed by our organism better than other types of cabbage. Cauliflower contains a huge amount of vitamins C, B1, B6, B2, PP, A, H. Heads of cauliflower contain potassium, calcium, sodium, phosphorus, iron, magnesium. For example, it contains 2 times more iron than green peas, pepper, lettuce; and 3 times more than squashes and eggplants. It contains 2-3 times more ascorbic acid (vitamin C) than common white head cabbage.
