Asparagus (sparrow-grass) originates from the Mediterranean region and is known to people since ancient times. Asparagus is one of the most delicious, healthy and expensive vegetable crops; also, it is one of the earliest vegetables of the new season: the harvest of young shoots begins in April and lasts until July. Tender shoots (or sprouts) are used for food. Asparagus contains such compounds as: carbohydrates, carotene, potassium salts, lysine, amino acids, phosphorus, thiamine, calcium, riboflavin, asparagine, coumarin, saponin, small amount of alkaloids, vitamins B1, B2, C, PP, provitamin A; it also contains chlorophyll - therefore, in addition it also poses a good haematogenic (i.e. blood-forming) product. Green tips (apexes) of asparagus are rich in vitamin A, there is plenty of water in them, and they are considered an excellent vegetable for a cleansing diet. Asparagus is used to make soups, salads and other dishes, that are irreplaceable auxiliaries during treatment of such ailments as liver and kidney diseases, diabetes mellitus, edemas. Green asparagus is the most nutritious - it can be served hot, with molten butter; cold in salads; in soups, or as a filling for sandwiches.
